Try adding the following to your mtouch arguments and see if it works. I, too,
was getting strange, seemingly unexplained JIT issues only on the device.
Below is an excerpt from an email I sent to the mailing list about this:

Well, I got it to work. One thing that is definitely part of getting it to work
is that I added the following three "mtouch arguments" to the iPhone Build
section of the Project Options window (found in the troubleshooting page -
http://docs.xamarin.com/ios/troubleshooting - search for "Ran out of
trampolines"):
-aot "ntrampolines=2048" -aot "nrgctx-trampolines=2048" -aot
"nimt-trampolines=512"
