If it's any help, I changed the Log method in the bindings
(testflight-cplusplus.cs) to NOT use string.Format:
public static void Log (string msg)
{
using (var nss = new NSString (msg))
WrapperTfLog (nss.Handle);
}
(I do the formatting outside of this method, in my general logging routine)
This fixed pretty much all my issues.
