You are correct... There aren't many photos of an M15 with lots of people in
them. However, I can think of quite a few sailors who do what you mantion
and more. A good example would be:

They sail five onboard all the time (it's a family craft). And there is:

These folks sail with four quite often (read the story).  Also look at
"Sirius" M15 on my Photo Site. That would be the Lester's who sail as a
couple, most of the time (photo on the site). In fact, they sold a 20 footer
to buy the M15.

Part of the attraction is:

The 15 is very manageable by yourself. Easy to trailer, launch and retrieve.
It's perfectly capable with two and if you add many more, keep them small
because one may be standing in the companionway for comfort. If you want to
sail two couples (adults) better to go with the M17, because the M15 would
be crowded (however...it's done all the time for a few hour day sail... the
craft is capable).

Here's what you need to do: Join our on line E-mail forum and request a test
sail. You may have to drive some to get to one, but that's the best way to
figure it out. I've sailed aboard two M15's. One in the SF Bay area and the
other in Ashland, OR (look at "Margarita" I took all those photos).
Excellent craft. Very seaworthy fast and fun.

Most important is the test sail. Make sure you do that before you buy any
small sailboat. There are some big dissapointments in little boats out
