I cannot remember the idea of changing the galley into a seat/berth has ever 
been discussed before and I've been on the list forever and have all of the old 
M-boat newsletters. I have the galley model and it works well for me because I 
mainly single-hand my M17. 
It seems to me that used M17's are getting more difficult to locate. You could 
certainly keep looking for the 3.5 berth model, depending upon your time frame. 
Thinking about changing the berth model, you will need to cut out the 
sink-shelf-storage assembly, then construct a plywood frame to tie into the 
stringers for support. Using wood would be easier than glass, in my mind, then 
paint the entire frame and bunk with epoxy paint.
The interior of my M23 was built without a drop in glass liner, and the berths 
are all wood.
The two big questions in my mind are is the galley a structural member,
and how adept are you at hand tools and woodworking? Do you have the time and 
desire to modify a boat?
Actually, it sounds to me like an easier job than rebuilding the foredeck of my 
M17 to remove the saturated balsa core! (I wouldn't wish to do that again).
