I think the “Reel Art” book covers this topic (poster crediting) pretty well, in that of course any particular film might have several contributors—more unsung than sung. The Art Directors get all the credit for all of their projects, though each film is a team effort. It is a bit easier to credit illustrators if they created the artwork—depending upon the era (Bill seems to have caught more of the era of photo vs. illustration use.)
There are a lot of classic posters that are signed, so that makes it a bit easier to identify. So, when you see “The Cameraman” poster (MGM, 1928), that is signed “Eaton”, which is the surname of Malcolm Eaton. Not easy to find a lot of background information on him, but it is out there somewhere. He provided a lot of artwork for Buster Keaton films—i.g. “Spite Marriage”, however, there is also an interior pressbook caricature by Al Hirschfeld, so that film has at least two contributors.
