Katrina - I don't know if he's got any books specifically on snow tracks, but look up the author Stephen Swinburne. He writes a lot of non-fiction picture books and focuses his attention on the ADK's and the Vermont woods. My favorite is Wings of Light which is about butterfly migration, and thus has nothing to do with tracks, but it's still really good. He's also written The Woods Scientist and Black Bear which might actually help you (I own copies if you want to borrow them.)
