All options that control ffmpeg written files are "movie_*" and documented

You can try to enable movie_output_motion to see what exactly changed
pixels caused the trigger.
Also very usefull to enable locate_motion_mode which will locate motion in
the movie files
As soon as you identify the changed pixels there are different strategies
to reduce false positives. If you could share your examples we could help
you with some generic steps
