When you receive a signed mail, there is together with the signing certificate some info about what algorithm the person that sent you the mail supports.
It will be used by Mozilla to select an appropriate algorithm when sending mail. So if you can customize that info, and only leave AES in the list, Mozilla should automatically select it when replying/composing new mail.
