I know that some people have problems with certian sections of the CC licenses; in particular section 5, which appears to state that the licensor is liable in any legal action that may result from the document.
The links you gave don't seem to me to assert that the licensor is without qualification liable in any legal action.
They do make the reasonable point that we should take steps to make sure we have the rights to license the text as we do. But we take such steps for code, so there's no particular extra issue about taking them for documentation.
