This is not possible in the current Composer. See bug 55313: http://bugzilla.mozilla.org/show_bug.cgi?id=55313
However, as noted in my comments in bug 78128 (and bug 55313), it's not all that hard to convince Composer to load XHTML documents. I'm running such a Composer at this time and it works pretty well. I don't know whether editing an XMLDocument will be easy or hard. I just open files.
