I'm a little confused...why would you need to strip the SCCM client and Forefront if using MDT?
My recommendation is to use a Task Sequence for the complete build and capture process. Normally I strip the sccm client and forefront. Anyway, tried using the image in an sccm TS and it's a bit odd. The sccm client installs but often the forefront does not. So shmoogled and read the stuff about leaving the client on, deleting the certs etc. in an Mdt build this is flawless, in sccm the sccm client was fine but the fep icon was missing first time round.
