Ugh, thread split. Yes you can capture an image of xp embedded. Your going to have to use configmgr 2012sp1 or have the windows embedded add-on for 2007.
Largest issue, will be ensuring the hardware your embedded stuff runs on, can actually boot win pe 3.0 (MUST be ACPI compliant.)
