I have just verified that guvcview is not working on my Fedora 34 Gnome workstation either.
I suspect this is a pipewire issue, but so far I have found nothing recorded anywhere. This sounds similar: https://wiki.archlinux.org/title/PulseAudio#guvcview however, although my audio sources are suspended, they show up as running when guvcview is recording. I tried to make changes to alsa- monitor.config to disable suspend, but that did not seem to work.
