So the incoming type is "application/vnd.ms-excel".

The outgoing MIME type is "application/excel". This is governed by the
MIME types file, by changing the relevant entry there you can change the
outgoing MIME type also to "application/vnd.ms-excel". See section 5.2.
of the manual, "MIME Type configuration with mime.types".
