Well, I have it working here, and this is what I have. In my .muttrc:
auto_view text/html
set mailcap_path="/home/jhelfman/.mutt/mutt.mailcap:/etc/mailcap"
this is my "mutt.mailcap" that is sourced with the above entry.
text/html; lynx -dump %s; copiousoutput; nametemplate=%s.html
