This is from the muttrc manpage:
       pgp_autosign
              Type: boolean
              Default: no

              Setting  this  variable  will  cause Mutt to always
              attempt to PGP/MIME sign outgoing  messages.   This
              can  be  overridden  by  use of the pgp- menu, when
              signing is not required or encryption is  requested
              as well.

There is an option for autoencrypt also, but that can be dangerous :-)
You should also consider using an encrypt to self in your pgp setup. 
This will allow you to read encrypted messages that you have sent out.
If you don't do this, your encryption key is not on the message and you
will be unable to read what you wrote.
