i'm pretty sure that setting the hostname doesn't attempt to change the
envelope sender unless you specify 'set envelope_from'.  sendmail only
usually complains if you try to fake the envelope sender (and in most
cases it will work, but add an 'X-Authentication-Warning' or something
similar.

the 'From:' header is just part of the mail itself, so unless your
admins have done something particularly strict, there shouldn't be a
problem with changing it....

what does your 'Return-Path' header look like? the list rewrites it with
its own, so i can't see it on this message.

you don't need any permissions to add them.
something like:

my_hdr Organization: New Dream Network

should work.
