I'm sure someone's done it... tbh, even as a long term Mutt / vim user,
I gave up even considering this years ago setup IMAP and use Apple Mail
(I know this won't work for everyone's use case) for this sort of use...
works well enough for when I'm out and about, even without some of the
configurability and bells / whistles. It does have the ability to
configure multiple sender addresses, though it doesn't always do a good
job of picking the right one to use.

I would personally worry that the iPhone keyboard would create some typo
disasters when used with mutt, where you can do a lot of damage with a
small number of keystrokes. And, using keys close to each other, an
asset on a regular keyboard, could have a compounding effect here.
