I use mythtvfs for other reasons, so I had tried mythtvfs re-exported
via NFS sometime early in my troubleshooting.  It worked at a basic
level, but the flat namespace isn't very user-friendly with a large
number of recordings.  mythtvfs plans to add support for
subdirectories, but it's not there yet.

Then I tried Scott's suggestion about mythrename earlier today.
mythrename --link to an NFS mount works, at least for playback.
