Firstly, upgrade to 3.23.x as with 3.22 you will need to compile from sources to
change character sets. Next, read the following section in the manual:

Hello,
I am working with a MySQL 3.22.32 on Linux.
I would like to change the character set of
MySQL from latin1 to greek because it doesn't
work right with the greek words and data.
(sorting is not functioning well)
Can you tell me how I can change the default character
set from latin1 to greek.
