I would go from the other direction. I would use OpenOffice.org to create a data entry template, where the user would enter the field information that goes into the database, then I would have an OpenOffice.org macro/template that would create the document out of the database fields. It seems conceptually easier to build the document from the data than to create the data from out of the document.
