Hi,

Try,

>  libexec/mysqld --verbose --help
for mysqld options with variables

or

 >bin/mysqld_safe --verbose --help
for mysqld options

For instance I want only /etc/my.cnf read and skip reading of other default 
file, 

>./bin/mysqld_safe --defaults-file=/etc/my.cnf
