actually had to test it. :)
It's "safe-show-database" .. notice the - instead of _ .

do you have to compile mysql with some special parameter? My version
(3.23.37, SuSE rpm) fails with a "unrecognized command" error when I try to
start it after having inserted
"safe_show_databases" or "skip_show_databases" into my.cnf
