Changing the default output format is a very bad idea because it will break every client application depending on the current format. The default format has to be controlled by the client software at table creation time and not on a per user basis in the config files. The remaining option I can see is to ADD a new display format and define TIMESTAMP(1) or possibly TIMESTAMP(15) to display a string like a DATETIME column.
