Apparently Apple decided to move Darwin's version number to 5.1 when it shipped the update of OS X 10.1.1. I have heard this was done to get Darwin's version number closer to the version of OS X that it ships with and will at some point in time become the same version number as Mac OS X to make things more uniform.
