FROM_DAYS(TO_DAYS(t)) will strip out the time part and convert a DATETIME
or TIMESTAMP value to a DATE.  So you could do this:
UPDATE tbl_name SET create_date = FROM_DAYS(TO_DAYS(timestamp_field));
