As it turns out, I was trying show variables like --

And had a syntax mistake....

Does SHOW VARIABLES only show a certain number of
lines? When I ran this command, character_set was not
listed... the list seemed cut off just before it.

Unless it is an issue with SSH only showing x amount
of lines..
