Most likely, your DefaultTVChannel setting is
wrong.

Now, I KNOW that the 'default' channel is set to '51' (2nd 'best'
channel in my area)... What am I doing wrong?

Check in mythtv-setup for that card that dvbinput is selected not
television for Default input in the DiSEqc options.
