I think I will bite the bullet and run CAT 5e/6. It will be more construction, but in then end, I will either have a reliable video stream or else I'll at least be able to rule out networking as a probable cause. Thanks for the tips!
Regarding cable types - I wouldn't spend the extra money on Cat 6. Cat 5e should do ya nicely.
