Most of mythtv depends on having tv guide information in the database. As I understand it your only option in the current stable release 0.18.1 is to use 'Manual Recording' from the 'Manage Recordings' menu. You choose a channel, start time and a durations. It's a bit fiddly but it does work - I use it for recording off my VCR. I believe that the current SVN build has a one-touch recording feature which sounds like what you were hoping for.
