You can change the /etc/postfix/transport to accommodate your needs. This
file tells postfix which server to use for relaying. The format of this file
is:
domain.com smtp:ip_adddress_of_your_exchange
where domain.com - the domain name you want to send mail to (perhaps you
will use here your domain).
After you will change this file don't forget to make postmap
/etc/postfix/transport and then restart postfix.

actually we upgraded our exchange mail server and we want to shutdown the
old one. My worries is that nagios (now I understand it is postfix) still
points to the the old mail server 

PS: How to determine which mail server my DNS uses?
