I didn't test this out but in gconf-editor in:
/desktop/gnome/thumbnailers/ you can enable/disable a thumbnail for a
certain mime type but it's not complete since the mime types for
images like png, bmp, jpeg, gif etc... are not there so perhaps they
are somewhere else?

Other then that you can disable thumbnail generation all together in
/apps/nautilus/preferences/show_image_thumbnails but i don't think you
want or need that.
