The ubuntu patch which removes the menu buttons is this one:
https://bazaar.launchpad.net/~ubuntu-desktop/nautilus/ubuntu/view/head:/debian/patches/restore-traditional-menu-bar.patch

I don't know how to recompile the .deb package without this patch, but I
hope this helps you find your way.
