The PBS Masterpiece Theater's American Collection: Educator's Site, created in partnership with the National Council of Teachers of English, is the Internet companion site to the PBS series.  This site contains 'teaching resources, lesson plans, background information, author profiles, online links, and behind-the-scenes production news' on the featured films of six main authors, Esmeralda Santiago, James Agee, Willa Cather, Eudora Welty, Langston Hughes and Henry James.  The selection of American Literary Resources includes links to teacher-evaluated websites on other prominent American writers as well as other 'teaching aids.'  A unique feature of the site is access to 'Between the Lines,' a literary magazine with Poetry, Art, Short Stories, Essays, Dramas, some by featured American writers and artists and some by students who have submitted their work.  American Collection is truly a site dedicated to developing an appreciation of American literature, whatever your literary background!

When I was on duty in the maternity ward, one of my patients was a woman who was having her first child. Because of her medical situation, she had to undergo a cesarean procedure. After the operation, I handed her the newborn child and declared, "Congratulations! You have a healthy baby boy." Still a little groggy from the anesthesia, she responded, "That's great. What's his name?"

The Recipe File

Appetizers, Salads and Breads:
Shoe Peg Corn Salad

from River Road Recipes IV... 
Warm Welcomes


INGREDIENTS:
4 (11-ounce) cans Shoe Peg corn, drained and rinsed
1 (2-ounce) jars pimento, drained
1 cup chopped green bell pepper
1 cup chopped onion
1 cup chopped celery
1 cup vinegar
1 cup vegetable oil
2/3 cup sugar
2 teaspoons salt
1 teaspoon pepper
TO PREPARE:
 
     Combine the corn, pimento, bell pepper, onion and celery in a bowl and mix well.  Whisk the vinegar, oil, sugar, salt and pepper in a bowl until combined.  Add the vinegar mixture to the corn mixture and toss gently to coat.  Chill, covered, for 8 to 10 hours.  Drain before serving.

Note:  Widely grown in the south, Shoe Peg corn is also known as sweet corn or country gentleman.  Using a canned or frozen product makes cooking for a crowd much easier.  Always rinse canned corn before using.
