thanks for the clarification. I only need 20VA max (50mA @ 400V AC), so the smaller the variac, the more compact my power supply can be.

With regard to using a variac, the size (current capacity) doesn't matter as 
long as it's big enough.  The variac will simply supply whatever current is 
called for by the load, up to it' s rating of course.  The variac is a voltage 
output device.
