Addendum: 8bit is of course a bit optimistic for R2R, so maybe I will
just use a chip with built-in DAC.

I will probably build an 8bit R2R network and use a shift register to
create a small DAC that way.
Now that I have you here, can you answer me another question? I was
wondering if the circuitry couldbe tweaked as to allow a maximum
output voltage of 250V or even 300V. I will only need a maximum
current of 10mA since I want to build a testing stand for single Nixie
tubes.

You can also build your own DAC with an R2R network controlled by
GPIOs that will give you a linear Radj = Vout voltage vs binary
code. You can buy R2R ladders off the shelf:
