Have a look at
mibII/system_mib.c:writeSystem
In some ways this is a bit overly-complex, as it actually
supports multiple objects in a single routine. But other than
that, it's probably one of the simpler old-style write handlers.
Also have a look at the AGENT.txt file - final part.
That also discusses SET support with the old API.
