You should use a A/D board to analyze the audio input. There are several
good boards from Quancom or other vendors that give you more analyzing
options than a sound board. They usually have SDKs around them that allow an
easy integration into your application.

You should use a headset for the conference and a separate microphone for
the audio recording in order to avoid audio feedback influences.
