Thus I need IPv4 LL if I want to wire together two laptops with an Ethernet cable.
You don't _need_ IPv4 LL in that case, they just make your life easier.
But if I do this at hope where I have a router/NAT/DHCP box, do I need IPv4 LL at all?
No, they're useless in that case. Existing implementations such as MacOS and Windows will not configure an IPv4 LL if another addressing method is being used. RFC 3927 also states that implementations SHOULD NOT assign both an IPv4 LL address and a routable address on the same interface.
Does the rest of Bonjour work with the DHCP assigned address, or is there something which works differently in LL is used?
Yes, Bounjour works the same way with and without IPv4 LL. Bonjour can work without routable addresses due to the fact that it uses multicast DNS, which is why using IPv4 LL in the absence of a routable address benefits systems which use Bonjour.
