I don't believe there is a way to do this and IIRC, this is one of the problems that NFSv4 set out to address by only using a single port for all operations, instead of the splattering of port numbers for nfsd, mountd, statd, etc...
mountd is an RPC-based service, and as such relies upon rpcbind to provide the rpc prognum -> port number mapping. It cannot be run in a "standalone" mode.
