First check that you have MySpell installed for the language you want (English-UK in my case) Then in OO go to Tools>Options>Language Settings>languages and select your chosen language for Locale Setting and Default language for documents. Next goto Tools>Options>Language Settings>Writing Aids and make sure the chosen language is specified for Available language modules and user defined dictionary, then check the spellcheck options you want under options.
