What are you running, KDE? Enlightenment? Each one has different places to disable the virtual desktop settings. As far as the monitor goes, run Xconfigurator from a terminal and you should be able to set things up there. Make sure you manually pick your resolution and color settings though. I have it done it lately but I know it always defaulted to something that I didn't want. Hope this helps.
