As root, edit /etc/inittab, and look for a line like this:
id:5:initdefault:

Change the 5 to a 3, and reboot your system to see it take effect. This 
number represents the run-level of your system during boot. A run-level of 
5 indicates start X right away and launch a graphical login manager. A 
run-level of 3 indicates a text-mode start-up.
