Go for it and have a bit of fun but expect a learning curve.

I do this and use Postfix. If you only have the one box that will probably do it but if you have multiple boxen you might want to run an IMAP server such as cyrus so that all the mail is kept on the one machine and you can access it from any box. In my case I do this so I can access my mail from the main machine or my laptop over the wireless network and my wife can get her mail via her laptop which runs windows. New email accounts can be created willie nillie, for example both our dogs have their own accounts (don't ask why) but they are even subscribed to a couple of mailing lists. Having got that working you can then use your own antivirus of choice and setup your own spam rules or software. The downside is that at this stage if a lot of spam etc gets through you only have yourself to blame.

If you just want to get your mail use fetchmail, if you want to experiment go for setting up your own server.

PS. Forgot to mention my favourite. If you use cyrus IMAP you can use SIEVE filtering which filters your email on your server before you access it rather than having your client thrash about trying to filter 600 messages when you connect.
