I've never tried this, but FWIW, the /etc/X11/xorg.conf lets you define more than one screen, where a screen is a combination of a device (graphics card) and a monitor. I think you would need to define the two monitors, and set up two screens for them. Not so sure about the device. I suspect it would be the same device, since the device is dual-head capable.
