If you're willing to have both full names on the label, i.e.,
Bill Klas
Louise Klas
123....

The salutation line will read Bill & Louise, as you request.

The salutation is complicated, since as you note, you often want to 
individualize it. You can't just set  up a calculation to take the 
first three words (name and name) for example, since some people use 
two names (Marth Lou) or have hyphenated last names. Easiest way is 
to add a field for a manually entered salutation, and change the 
calculated one to be,
If(there is a value in the manual field, use the manual field, 
otherwise use the existing calculation)
