It's not a perfect fit, but I would suggest using highway=ford, along with a width tag if you know roughly how wide the stream is. It would at least give the suggestion that you might get your feet wet if you can't jump across that large a stream! Although fords are usually used for roads, I don't see any problems for using them for paths as well.
