No, I don't think there's a special tag for racing surfaces. From the wiki:
Tag:highway=track Roads for agricultural use, gravel roads in the forest etc.; usually unpaved/unsealed but may occasionally apply to paved tracks as well. and from me: Track fills the space between well-maintained, paved, through roads and those ways left by occasional passage of animals or vehicles where there's no road (which probably wouldn't even be mapped in most cases; highway:path seems to be mostly for more intentional ways).
