you could try forcing the NFS client on the Ubuntu box to be NFSv4 ...

basically call "mount -t nfs4 -o proto=tcp,port=2049 <server>:<share-point> 
<mount-point> and see if that makes any difference at all.

I'm not sure if you need to specify the proto in the options, but both those 
documents appear to use that syntax.

This'd be a pain if you were auto-mounting ...
