Downshifting through the gears as a tool for slowing during an EMERGENCY STOP will get you dead. It takes way to much time, will load the rear wheel causing loss of rear wheel traction which means the likelyhood of a high side, low side, and a general loss of directional control. It's a really Bad Idea.
E braking should consist of a heavy handfull of well modulated front brake, a marginal amount of rear brake, and a good eye and reflex to look for a way out and steer away from the hazard. Adjust your rear brake out so it's emergency input puts less power to it. Go practice E braking in a big, slippery parking lot or go take an MSF BRC or ERC class. The ONLY downshifting you should be doing during an E stop is cramming through all the gears quickly WITH THE CLUTCH FULL IN so that when you are finally stopped, you'll be in 1st gear to haul ass away from the cars that will be bearing down on you.
